Merlot

Merlot from Pays d’Oc (Vin de Pays – South of France) 2004 was an excellent vintage for this grape in the western part of the Languedoc region in southern France. Very early during the alcoholic fermentation, the grapes provided a lot of spices (pepper, herbs) and fruity notes. After a cold pre-fermentation during a few days, the alcoholic fermentation started in temperature-controlled stainless steel cuves for 2 weeks. The everyday extraction was soft in order to keep the freshness of the fruits and to find the best balance between structure and aromas. After the malolactic fermentation, the wine stayed 6 months in vats before its bottling.
