Chardonnay grapes from the cool vineyards of Limoux in Southern France are picked at a time to produce the best balance between aromas and maturity.

Winemaking:
This chardonnay has been made with traditional Burgundian winemaking methods. The alcoholic fermentation in temperature-controlled stainless steel tanks lasts 2 weeks. In order to keep the freshness and the minerality of the wine, the malolactic fermentation has been blocked. This chardonnay has been aged in vats for 6 months on its lees. The lees were stirred every two weeks bringing richness and complexity to this refreshing, enjoyable Chardonnay.

Visual Aspect:
Lovely pale yellow, bright and clear.

Nose:
Aromatic with a hint of citrus, honey and brioche.

Palate:
On the palate, we are reminded of peaches and apricots. A fresh, rich wine with a generous, well balanced lingering fruity finish.

Food Pairing:
White meats, grilled fish or shellfish.

Aging:
To be opened quickly with good friends!
