Sure, our French rabbits are cute and cuddly, but it’s what’s in the package that really counts! Our rabbits have been hopping around the countryside of Southern France, enjoying themselves as only French rabbits can do (nudge nudge, wink wink, know whatwemean!). But, more importantly, they have been happily discovering France’s finest varietals - Syrah, Merlot, Pinot Noir, Cabernet Sauvignon, Grenache, Mourvedre - in order to make the most exquisite family blend. These varietals combine to bring out the distinct qualities each has to offer, through living intimately together!

Tasting Notes

Location:
The vineyards span the delta of the Rhone River (Gard) to the Pyrenees-Orientales via Limoux (in Cathar country), which boasts a particularly good reputation for elegant wines.

Varietal(s):
Syrah - Merlot - Pinot Noir - Cabernet Sauvignon - Grenache - Mourvedre

Winemaking:
Cold pre-fermentation maceration, smooth, gentle extraction with daily return of the juice from the bottom of the vat over the cap, 3-week maceration, separation of press and run off juice at pressing.

Visual Aspect:
Medium purple red color with crimson reflections

Nose:
Aromas of dried black cherry and chocolate, with notes of clove and herbs.

Palate:
Powerful with rounded ripe tannins and a mellow, well-balanced mid-palate. Rich finish with notes of cocoa, mocha and liquorice. Very good length; a wine with excellent balance.

Food Pairing:
Grilled game with wild mushrooms, pasta with tomato sauces, or beef carpaccio

Serving Temperature:
57-60° F
